Conor Porter’s Soft Pretzels
Ingredients
dough:
- 3 cups flour
- 10.5 oz. tap water
- 1/4 tsp. instant or active dry yeast
- 1 Tbs. sugar
- 1.5 tsp. salt
egg wash:
- 2 egg yolks
- twice as much water as egg yolk (by volume)
- coarse sea salt
- 3 Tbs. baking soda
Instructions
- mix flour, sugar and salt in bowl
- add instant yeast to dry incredients or active dry yeast to water, depending on type used
- mix dry ingredients
- add water to dry ingrdients
- mix until fully mixed; the handle of a spoon works well
- cover bowl with plastic wrap and let proof for 8-18 hours in a warm place
- cut dough into 8 sections and roughly shape into cylinders
- let proof for additional 10 minutes
- pull cylinders to shape into ropes of dough
- shape and cut as desired
- add 3 Tbs. baking soda to pan of boiling water, reduce to simmer
- poach dough in water for about 30 seconds per side
- remove dough and let drain
- mix egg yolks with twice as much water as yolk
- brush eggwash over dough
- sprinkle on the coarse salt
- bake at 450F for 14 minutes, or until brown
