Mark Chauhan’s Ricotta Cookies(username: markchauhan)
Ingredients
- 2 sticks of unsalted butter, softened
- 2 cups of sugar
- 1 3/4 cup of ricotta cheese
- 1/2 lemon
- 4 teaspoons vanilla extract
- 2 large eggs
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 3/4 teaspoon fine sea salt
- 4 cups confectioners’ sugar
- 2 tablespoons fresh lemon juice
- 1/2 cup milk
Instructions
- Preheat oven to 350. Line cookie sheets.
- Mix together: 2 sticks butter with sugar. Then add ricotta, lemon zest, vanilla, beat eggs, add flour, baking soda, and salt
- Place dough into balls
- Melt butter and mix with confectioners’ sugar, melted butter, lemon juice, and vanilla, and milk.
- Spread the icing!
