Robert Schloen’s Pumpkin Cupcakes

Delicious pumpkin cupcakes that you can eat plain or top with a cream cheese frosting or glaze for an extra bit of sweetness. Makes 24 cupcakes.

Ingredients

• 1 cup vegetable oil
• 3 cups sugar
• 4 eggs
• 2 teaspoon vanilla
• 4 cups flour
• 4 teaspoon baking powder
• 1/2 teaspoon salt
• 2 teaspoon cinnamon
• 1/2 teaspoon ginger
• 1/4 teaspoon ground clove
• 2 cups canned pumpkin

• Optionally: 16 oz cream cheese frosting/glaze

• Note: cinnamon, ginger, and clove can be substituted with an equivalent amount of pumpkin pie spice

Instructions

1. Preheat oven to 350F. Grease muffin tin or place cupcake liners.
2. Mix together oil, sugar, eggs, and vanilla.
3. In a separate bowl, combine remaining dry ingredients.
4. Stir together until just blended, then stir in the pumpkin.
5. Distribute batter to 24 muffin cups.
6. Bake 20 minutes.
