Pavi’s Lemon Zucchini Cookies
This recipe makes 36 lemon zucchini cookies
Ingredients
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 3/4 cup butter (slightly soft)
- 3/4 cup sugar
- 1 egg
- 1 tsp lemon zest
- 1 cup grated zucchini
Instructions
- Preheat oven to 375F.
- Mix together the dry ingredients: flour, salt, baking powder. Set aside.
- In a different bowl, mix the butter and sugar together until creamy.
- Add the egg and lemon zest to the butter and sugar mixture.
- Stir in the dry ingredients slowly. Then, fold in the zucchini.
- On a greased baking tray/ baking paper, make dollops of cookie dough of around 1 tbsp.
- Bake for 10-12 minutes.
