Duojiao Fish Head (Steamed Fish Head with Chopped Peppers)
Duojiao Fish Head is a famous dish from Hunan cuisine in China. It is known for its spicy flavor, tender fish, and rich taste. This is one of my favorite traditional dishes.
Ingredients
- 1 fish head
- 3 tablespoons chopped red peppers
- 1 tablespoon chopped garlic
- 1 tablespoon chopped ginger
- 2 green onions
- 1 tablespoon cooking oil
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon cooking wine
Instructions
- Clean the fish head and cut it in half so it can lay flat on a plate.
- Rub the fish head with salt and cooking wine, then let it rest for 10 minutes.
- Put the fish head on a heat-safe plate.
- Spread the chopped peppers, garlic, and ginger on top.
- Steam over boiling water for 10 to 15 minutes until fully cooked.
- Add soy sauce and sugar after steaming.
- Heat the oil and carefully pour it over the fish head.
- Garnish with chopped green onions and serve hot.
This dish is best served with rice. The soft fish and spicy peppers go very well together.
