Yanni’s Dolmades
A Greek classic. It hits.
Ingredients
- 25 grape leaves
- 1 lb ground Beef
- 1 lb ground lamb
- 1 tbsp fresh parslet, minced
- 1 garlic clove, minced
- 1 cup rice
- 1 onion, chopped
- 16 ounces of beef broth
- juice of 4 lemons
- 4 eggs
- Salt and pepper to taste
Instructions
- Drain, rinse, and dry grape leaves
- In a large bowl, mix the meat, parsley, onion, and garlic
- Lay out each leaf stem side up, and place 1 rounded tbsp each leaf
- Fold the leaves over the meat like a burrito, not too tight
- Place the dolmades snugly into the bottom of a pot
- Place a plate or lid on top of the dolmades to prevent unraveling
- Add the broth to the pot, and bring to a boil
- Once boiling, set heat to low and let simmer for 30 minutes
- Remove broth and let cool a little
- In another bowl, beat eggs and lemon juice
- While beating egg mixture, slowly ladle in warm broth
- Slowly add sauce to the dolmades
