Kara’s Cowboy Caviar
One of my family’s staples, especially for New Year’s Eve. Serve with tortilla chips.
Ingredients
- 4 tablespoons red wine vinegar
- 4 tablespoons hot sauce
- 1 tablespoon vegtable oil
- 2 cloves minced garlic
- 1/4 teaspoon black pepper
- 3 avocados
- 1 can 15-ounce black-eyed peas
- 1 can 11-ounce corn
- 2/3 cup sliced green onions
- 2/3 cup chopped cilantro
- 5 roma tomatoes
Instructions
- Drain the corn. Drain and rinse the black-eyed peas.
- Mix together vinegar, hot sauce, oil, garlic, and pepper.
- Add black-eyed peas, corn, green onions, cilantro, and diced tomatoes.
- Add chopped avocados prior to serving and mix.
