Gabbie’s Chicken Chili
If you’ve recently jumped on the pressure cooker bandwagon, like me, this recipe is great. It’s fast, easy, and will last all week.
Ingredients
- 2 chicken breasts
- 15 oz blackbeans (drain and rinse)
- 1 medium onion chopped
- 15 oz of corn
- 10 oz Rotel diced tomatoes and green chilies
- 1/2 cup chicken broth
- 1 tsp chili powder
- 1 tsp of cumin
- 8 oz package of cream cheese cut into 6 pieces
- 0.4 oz packet of ranch mix
Instructions
- Place into Instant Pot (or any pressure cooker of your choice) in the following order:
- chicken
- beans
- onion
- corn
- tomatoes
- broth
- spices
- ranch mix
- Stir ingredients
- Place cream cheese over chili
- Pressure cook on manual high for 20 minutes
- Release pressure valve
- Remove chicken and shred
- Return to pot and stir
