Allie’s Black Bean Dip
This simple dip is always a crowd pleaser!
Ingredients
- 1/4 cup sugar
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- salt & pepper, to taste
- 1 can black beans, drained
- 1 can shoepeg corn (white), drained
- 1/2 red onion, chopped fine
- 2 roma tomatoes (or equivalent)
- 1 bunch basil
- 1 block feta, crumbled
Instructions
- Mix dressing of sugar, olive oil, vinegar, salt & pepper
- Drain beans and corn
- Chop onions
- Pour dressing over beans, corn, and onions
- Refrigerate for 24+ hours
- Chop tomato and basil and crumble feta and add to beans before serving
Goes great with tortilla chips or on top of romaine lettuce!
