Nick’s Gluten Free Banana Muffins
My SO prefers to eat gluten free, and I love buying bananas and not eating them before they go bad, so this is what I do with them. Makes 12 muffins.
Ingredients
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon cinnamon
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 3/4 cup genral purpose gluten free flour
- 1/2 cup butter
- 2/3 cup sugar
- 2 eggs
- 4 ripe bananas
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 375F. Grease muffin pan.
- Mix together the dry ingredients: baking powder, baking soda, xanthum gum, salt, cinnamon, and flours.
- Fold in the butter, sugar, and bananas.
- Beat in the eggs.
- Stir in the chocolate chips.
- Add the batter to the pan.
- Bake for 25 to 30 minutes.
