Yunsoo’s Tahini Banana Bread

Ingredients
- 80 ml vegetable oil + extra for greasing pan
- 320 g ripe bananas (about 3) + another half set aside for decoration
- 220 g all purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 220 g (can be reduced to 176 g) light brown sugar
- 2 large eggs
- 90 g tahini
- 1 tbsp sesame oil
- 1 tsp vanilla extract
- 135 g sour cream
- 1.5 tbsp granulated sugar
Instructions
- Preheat the oven to 350F (180C).
- Grease and line an 8x4x2.5 inch loaf pan with parchment paper. Leave a slight overhang on both sides.
- Mash bananas into a bowl using a fork.
- Sift together the flour, baking soda, and salt.
- In a separate mixing bowl, whisk together the brown sugar, eggs, tahini, vegetable oil, sesame oil, vanilla, and sour cream until smooth.
- Whisk in the mashed banana.
- Add the dry ingredients and use a spatula to fold until just incorporated.
- Scrape batter into the pan and rest half the banana set aside on top, and sprinkle granulated sugar.
- Bake for about an hour until golden brown and a skewer inserted into the middle comes out clean.
- Let it cool in pan for 15 minutes before taking it out and drying it completely.
