Tacos Al Pastor

Ingredients
- 2 pounds of pork shoulder
- 1 cup of pineapple chunks
- 1/2 cup of onion
- 3 cloves of minced garlic
- 1 teaspoon of kosher salt
- 1 teaspoon of dried oregano
- 1 teaspoon black pepper
- 1/2 cup of vinegar
- 1 tablespoon of achiote paste
- 1 can of chipotle chilies in adobo
Instructions
- Cut the pork shoulder into thin slices and place into a large bowl and then set aside.
- Pour the pineapple chunks, onion, chipotle chilies in adobo and achiote paste into a blender and blend until smooth.
- To the mixture, add the garlic, salt, oregano, black pepper, and vinegar. Mix until smooth.
- Pour the marinade on the sliced pork shoulder and let it marinate for at least 2 hours in the fridge.
- Set a pan on the stove on high heat.
- Place the marinated pork shoulder pieces onto the hot pan. Cook the slice for about 8 minutes and flip the piece halfway through.
- Place the Al Pastor on two tortillas and add salsa, cilantro, salsa, or lime. Enjoy!
