Stir-Fried Eggs

A fast, fluffy stir-fried egg dish with scallions and a light soy seasoning. Great with steamed rice. xingyuqiu0927

Ingredients

Instructions

  1. Beat the eggs with water or milk, salt, and white pepper until well combined and slightly frothy.
  2. Heat a wok or skillet over medium-high heat. Add the neutral oil and swirl to coat.
  3. Pour in the eggs. Let them set for 10-15 seconds, then stir quickly with a spatula to form soft curds. Remove to a plate while still slightly runny.
  4. Add the scallion whites to the pan and stir for 10-20 seconds until fragrant.
  5. Return the eggs to the pan, add the soy sauce around the edge of the wok, and toss gently to finish cooking.
  6. Turn off the heat, add the scallion greens and sesame oil, and toss once more.
  7. Serve immediately with rice.
