Stir-Fried Eggs
A fast, fluffy stir-fried egg dish with scallions and a light soy seasoning. Great with steamed rice.

Ingredients
- 4 large eggs
- 2 tbsp water or milk
- 2 scallions, thinly sliced (white and green parts separated)
- 1 tsp light soy sauce
- 1/4 tsp salt
- 1/8 tsp white pepper (optional)
- 1 tbsp neutral oil
- 1/2 tsp sesame oil (optional)
Instructions
- Beat the eggs with water or milk, salt, and white pepper until well combined and slightly frothy.
- Heat a wok or skillet over medium-high heat. Add the neutral oil and swirl to coat.
- Pour in the eggs. Let them set for 10-15 seconds, then stir quickly with a spatula to form soft curds. Remove to a plate while still slightly runny.
- Add the scallion whites to the pan and stir for 10-20 seconds until fragrant.
- Return the eggs to the pan, add the soy sauce around the edge of the wok, and toss gently to finish cooking.
- Turn off the heat, add the scallion greens and sesame oil, and toss once more.
- Serve immediately with rice.
