Stargazy Pie
Description
Stargazy Pie is a traditional dish from Cornwall, England. It is known for its unique presentation, where whole fish are arranged so that their heads protrude through the crust, appearing to “gaze at the stars.” The dish combines baked fish with a creamy filling inside a pie crust.
Ingredients (Serves 4–6)
- 6–8 fresh sardines or anchovies (heads intact)
- 2 sheets of puff pastry
- 150 g bacon, diced
- 3–4 potatoes, sliced
- 1 onion, chopped
- 2 carrots, cooked and diced
- 200 ml béchamel sauce
- A small amount of English mustard
- A squeeze of lemon juice
- 1 egg (for egg wash)
- Salt and black pepper
Instructions
1. Prepare the Fish
- Clean the fish, removing the guts and bones while keeping the heads and tails intact.
- Season with salt, black pepper, and a little lemon juice.
- Let the fish marinate for about 10 minutes.
2. Prepare the Filling
- Cook the diced bacon in a pan until lightly browned.
- Add chopped onions and cook until soft.
- Mix the cooked carrots and potatoes into the pan.
- Add the béchamel sauce and a small amount of mustard.
- Stir well and adjust seasoning.
3. Assemble the Pie
- Preheat the oven to 200°C (about 400°F).
- Line a baking dish with one sheet of puff pastry.
- Pour the filling into the dish.
- Arrange the fish on top, with their heads sticking out over the edge of the pie.
4. Seal and Bake
- Cover with the second sheet of puff pastry.
- Cut holes in the pastry so the fish heads can stick out.
- Seal the edges and brush the top with beaten egg.
- Bake for 30–40 minutes, until the crust is golden brown.
Notes
- Make sure the fish are cleaned thoroughly to avoid any unpleasant taste.
- A little white wine can be added to the filling for extra flavor.
