Sri Lankan Hoppers Recipe
The ultimate Sri Lankan food that everyone loves!
Ingredients
- 200 g rice flour
- 1 pinch of yeast
- 3/4 cup of water
- 200 ml of coconut milk
- 1 tsp sugar
- 1 tbsp salt
- Coconut oil
Instructions
- Make a dough-like paste using rice flour, yeast, and water.
- Cover it and let it ferment for 18-20 hours.
- Add sugar and coconut milk to make a somewhat thick batter.
- Cover again and let it sit for 30 minutes.
- Add salt to the batter and mix until you get a homogeneous mixture.
- Heat the hopper pan on medium heat and add a little bit of coconut oil.
- Add a ladle full of batter to the center of the pan.
- Swirl the pan around to coat the inside with the batter.
- Cover the pan and let it cook for around 1-2 minutes.
- Once the hopper is properly cooked, carefully scrape it and remove it from the pan.
