Cam’s Spanikopita(userID:cmastoras)
Ingredients
- olive oil
- butter
- 1 package, frozen phyllo dough
- 4 scallions
- 4 mushrooms
- 12oz feta cheese
- 8oz cottage cheese
- 3 eggs
- 2 Tbsp parsley
- 10oz fresh spinach
Preparation
- 5 hours beofre use, defrost phyllo dough in package
- Preheat oven to 350
- In frypan, saute 4 scallions(chopped) and 4 mushrooms(chopped) in butter
- Combine int medium bowl the following: feta cheese, cottage cheese, 3 eggs, parsley
- In large bowl, put 10oz fresh spinach(cleaned) and the sauted mushrooms and scallions
- Pour the feta/egg mixture into the spinach bowl, and toss well to mix
Assembly
- Lay out wax paper on counter, have pam or olive oil spray ready
- Spray the pan(10x14”)
- Put 1 layer of phyllo on bottom of pan.
- Spray top of phyllo
- Continue to layer 7 more sheets on side and bottom of pan, spraying each sheet as you lay them in the pan
- Spoon spinach mixture on top
- Cover with 4 additional layers
- COver with 4 Tbsp of melted butter on the top
- Bake at 350 for 35 minutes.
