Ingredients

Preparation

  1. 5 hours beofre use, defrost phyllo dough in package
  2. Preheat oven to 350
  3. In frypan, saute 4 scallions(chopped) and 4 mushrooms(chopped) in butter
  4. Combine int medium bowl the following: feta cheese, cottage cheese, 3 eggs, parsley
  5. In large bowl, put 10oz fresh spinach(cleaned) and the sauted mushrooms and scallions
  6. Pour the feta/egg mixture into the spinach bowl, and toss well to mix

Assembly

  1. Lay out wax paper on counter, have pam or olive oil spray ready
  2. Spray the pan(10x14”)
  3. Put 1 layer of phyllo on bottom of pan.
  4. Spray top of phyllo
  5. Continue to layer 7 more sheets on side and bottom of pan, spraying each sheet as you lay them in the pan
  6. Spoon spinach mixture on top
  7. Cover with 4 additional layers
  8. COver with 4 Tbsp of melted butter on the top
  9. Bake at 350 for 35 minutes.
