Ncknight-un - Gluten Free Sugar Cookies:
I came across this recipe about 10 years ago, and it is usually my go to for making sugar cookies.
Ingredients
- 3/4 cup of salted butter (1.5 sticks), softened to room temperature
- 1-1/2 cups of granulated sugar
- 2 large eggs
- 1-1/2 teaspoons of vanilla extract
- 2-3/4 cups of gluten free baking flour
- 3/4 teaspoon of baking powder
- 1/4 teaspoon of salt
Instructions
- Add Butter and Sugar to a bowl and mix using an electric mixer. Then add 1 egg at a time and blend in. Lastly add in the vanilla and continue to mix.
- In a dry bowl add all dry components and mix well (flour/baking powder/salt).
- Slowly incorporate and mix the dry ingredients into the wet mix, until the dough is formed.
- Roll the dough out into sheets and put in the freezer for 30 minutes to harden.
- Cut the cookie dough into shapes, and cook for 8-10 minutes at 350 degrees.
