Joey’s Cilantro Lime Rice
Ingredients (serves 2)
- 2 Cups of Long Grain White Rice
- 1/2 Cup Cilantro, Finely Chopped
- 2 Tbsp Butter
- 1 Tbsp Kosher Salt
- One Lime
- One Dried Bay Lead
Instructions
- Cook the two cups of white rice per bag instructions, adding the bay leaf to the water to cook with the rice.
- While the rice is cooking, finely dice your cilantro, and cut the butter into small pieces.
- Once the rice is cooked, discard the bay leaf and move the rice into a large bowl.
- Add the butter to the bowl and mix until all of the butter is melted and spread evenly throughout the rice.
- Juice the lime into the rice and stir to incorporate.
- Add the cilantro and the salt to the rice and mix.
- Add other seasonings to taste and enjoy!
