Chilaquiles
Breakfast
Ingredients (about 6 servings)
- 6 tomatoes
- 4 jalapenos (or more if you like it spicy)
- 3 garlic cloves
- monterey jack cheese
- corn tortillas
- onion
- eggs
- sour cream
- chicken bouillon
- vegetable oil
Instructions
- Cut tortilla chips into quarters and fry in vegetable oil. set on a napkin to dry excess oil
- Roast tomatoes, jalapenos, and garlic until charred
- Blend all together and add salt, chicken bouillon and a small amount of water to bring to a saucy consistency
- Shred cheese
- Cut onions small
- Set up chips in a baking dish, sprinkle onion and cheese, pour sauce all over
- Bake at 350 for about 15 min
- Cook eggs as desired
- Serve with sour cream
