Malawah “Oxtail”
Ingredients:
-> 2 cups all-purpose flour
-> 2 1/2 cups milk
-> 2 large eggs
-> 1 tablespoon granulated sugar
-> 1/2 teaspoon ground cardamom
-> 1/2 teaspoon ground ginger
-> Pinch kosher salt
-> 2 tablespoons canola oil or butter, for frying
-> Honey, butter, or sugar, for garnish
Instructions:
- In a large bowl, whisk together the flour, sugar, cardamom, ginger, and salt.
- In a separate bowl, beat the eggs and mix in the milk.
- Gradually combine the wet mixture with the dry ingredients, whisking until smooth.
- Heat a non-stick skillet over medium heat and lightly coat with oil or butter.
- Pour about 1/4 cup of batter into the skillet and swirl to spread evenly.
- Cook for 1–2 minutes on one side until bubbles form, then flip and cook for another 1–2 minutes.
- Repeat until all batter is used.
- Serve warm, optionally with honey, butter, or sugar.
