Malawah “Oxtail”

Ingredients:

-> 2 cups all-purpose flour
-> 2 1/2 cups milk
-> 2 large eggs
-> 1 tablespoon granulated sugar
-> 1/2 teaspoon ground cardamom
-> 1/2 teaspoon ground ginger
-> Pinch kosher salt
-> 2 tablespoons canola oil or butter, for frying
-> Honey, butter, or sugar, for garnish

Instructions:

  1. In a large bowl, whisk together the flour, sugar, cardamom, ginger, and salt.
  2. In a separate bowl, beat the eggs and mix in the milk.
  3. Gradually combine the wet mixture with the dry ingredients, whisking until smooth.
  4. Heat a non-stick skillet over medium heat and lightly coat with oil or butter.
  5. Pour about 1/4 cup of batter into the skillet and swirl to spread evenly.
  6. Cook for 1–2 minutes on one side until bubbles form, then flip and cook for another 1–2 minutes.
  7. Repeat until all batter is used.
  8. Serve warm, optionally with honey, butter, or sugar.
