Olivia Li’s Baked Nian Gao
This dessert is super easy to make and one my mom taught me. It has a mild coconut flavor, a soft, chewy texture, and the perfect amount of sweetness.
Ingredients
- 1/2 cup oil
- One can (13.5 oz) of coconut milk
- 4 eggs
- 1/2 cup of milk
- 1/2 bag of rice flour (8oz)
- 1/2 bag of glutinous rice flour (8oz)
- 1/3 cup sugar (can adjust to your own liking)
- Little bit of salt
- 1 1/2 tsp of baking powder
- (Optional) vanilla
Instructions
- Preheat the oven to 375F.
- Line a 9x13 pan with parchement paper and a little bit of oil or butter.
- Mix together the oil, coconut milk, eggs, and milk.
- Add in the flour, sugar, salt, and baking powder.
- Mix thoroughly until the the batter is smooth.
- Add the batter to the pan.
- Bake for 40 to 45 minutes. The top should be a nice golden color.
