Bacon-Cheddar Mashed Potatoes
My roommate’s favorite recipe! This recipe takes about 25 minutes to make and yields 4 servings.
Ingredients
- 2 pounds small potatoes
- 1 cup milk
- 1/2 stick of butter
- 1 cup of shredded cheddar
- Sliced scallions to garnish
- 1/2 pack of bacon
Recipe
- Simmer the potatoes in salted water until tender (approximately 20 minutes), then drain.
- Let the potatoes cool slightly, then peel them.
- Heat up the milk with the butter.
- Mash the potatoes with the milk/butter mixture and stir in the shredded cheddar.
- Fry up the bacon (either on a pan or in the oven) and top with crumbled bacon and scallions.
